Ingredients:

1 Head of Fresh Cauliflower (Cut)
4 Tbs Salted Butter (melted)
1/4 c Whole Milk
1/2 Tbs Salt
1/2 Tsp Black Pepper
1 c Shredded Cheddar Cheese

 

Preheat over to 350 F. Steam your fresh Cauliflower until tender. Then mash with a hand potato masher. You just want to get it into smaller pieces. Next place in blender, add butter, and milk. Puree this in the blender until light, fluffy, and very little clumps. Next add salt and pepper. Lastly pour the mashed potato consistency cauliflower into a casserole dish and top with shredded cheese. Bake for 15 mins.

This is a very healthy and carb friendly substitute for mashed potatoes.
